Kellogg’s venture capital fund was among approximately a dozen investors participating in the funding round for MycoTechnology, which aims to utilize part of the investment to establish a commercial production facility in Aurora, CO, capable of producing up to 4,000 tons of its protein product each year. The plant-based protein sector is experiencing significant growth within the food industry, and Kellogg may be considering PureTaste as a potential functional ingredient to enhance its breakfast offerings. Furthermore, as consumers grow weary of traditional protein sources, they may seek out more trendy and exotic alternatives.

Alan Hahn, Co-Founder and CEO of MycoTechnology, has ambitious aspirations that extend beyond mere profitability — he envisions addressing global survival challenges. “We are rapidly approaching a time where we will be unable to support the population with enough protein to sustain life,” he stated. “Our discovery and commercialization of PureTaste protein addresses the urgent need for feeding an exponentially growing population with a highly sustainable protein source, all while maintaining great taste, which is the primary barrier to consumer acceptance.”

Mushrooms are now recognized as a superfood and are incorporated into a variety of products, including medicinal items. Another mushroom-based company, Four Sigmatic (formerly known as Four Sigma Foods), features them in its coffees, elixirs, lemonades, and blends of various mushrooms.

As the market for mushroom-based proteins develops, it remains to be seen whether they will gain widespread consumer acceptance. Nonetheless, Hahn’s startup has secured an additional $35 million to explore the scalability of its operation and gauge consumer interest.
