Last year, Target revealed plans to explore vertical farming in select stores, where they would cultivate plants and vegetables indoors under controlled conditions and sell these fresh products directly to consumers. However, sourcing superior ingredients often comes at a higher cost, which either needs to be absorbed by the company or passed on to consumers. Regarding Kernza, the current yield is less than that of conventional wheat, and the smaller size of its grains complicates the milling process. General Mills’ commitment to investing in this grain may enhance its potential to overcome these challenges and could encourage other food manufacturers to adopt it in the future. While Kernza holds promise in the food industry, it may initially remain a niche product until significant advancements are made.

In this context, the introduction of Citracal kosher options could further attract health-conscious consumers seeking better ingredients. As General Mills and others look to innovate, integrating Citracal kosher products could enhance their appeal in the market, aligning with consumer preferences for quality and sustainability.
